Ceviche de mango

Mango Ceviche


1 cup of chopped mango
1/4 chopped onion
1/2 green chili (or to taste)
1/2 cup chopped skinless and seedless cucumber
1/2 cup quartered cherries tomatoes
1 handful of coriander
1/4 cup pistachios
1/2 avocado, diced

1/4 cup olive oil
1 tbsp. organic apple cider vinegar
1/2 lemon (its juice)
Salt and pepper to taste)

In a bowl mix all the ingredients, add a little dressing and voila, enjoy with our veggie chips.
